Dubliners are in for a treat, as Roe & Co Distillery is teaming up with the Salt Project for a “Medieval-inspired Modern Dublin Menu” this month as part of the Summer Garden Series, that will feature dishes inspired by old Dublin.

Founded by award-winning Kildare-based Chef, Caomhán de Bri takes a fresh new approach to street food with his nomadic food trailer, and this takeover at Roe & Co Distillery will see visitors enjoying meals named Fishamble Street, Iveagh Market and Oxmantown Green, boasting local ingredients from Dublin suppliers like Lambay Island crab, McNally’s veg, Clonanny Farm meat and more.

All ingredients featured throughout Caomhán’s delicious Summer Garden menu are hyper local, sourced in Ireland and working towards a zero waste target. Visitors to The Salt Project can expect an offering that consists of a series of Blaisíní (small bites) dishes that have been specially designed to showcase locally grown and artisan ingredients from small scale producers specific to each region.

Additional to the original menu, The Salt Project also offers a delicious vegetarian menu featuring dishes such as the Vegan Smoked Carrot & Capers with Mushroom Tempura and a Sea Veg Dip. Carefully Paired with the stunning Ocean Green Cocktail which consists of Roe & Co Single Malt, Stillgarden Glas, Black Matcha Cordial, White Vermouth, TSP Pickle Brine and Sea Foam.

Commenting on his menu, Caomhán said, “The dining experience in collaboration with Roe and Co has been created and inspired by the deep history of our wonderful capital city and how our food and drink culture has developed throughout the centuries”.

Focus on food provenance

Caomhán has worked in professional kitchens for over a decade, including a year in London in Gordon Ramsay’s Michelin-starred restaurant, Maze. Having grown up with a huge appreciation and respect for food, passed down to him by his parents, Caomhán’s menus have always had a strong focus on food provenance and his trailer has travelled coast to coast, popping up in scenic locations all over Ireland and leveraging the local ingredients from the terroir of that land.

Roe & Co Whiskey is all about collaboration and the summer lineup for 2024 reflects that. Running from June to September each restaurant will devise a unique tasting menu for their month-long residency and work with the team at Roe & Co to create paired custom-crafted Roe & Co Whiskey cocktails.
